There are many cat food brands that have a line of hypoallergenic cat food. Many of these lines will exclude a type of food, or protein that your cat may be allergic to. When looking for a type of hypoallergenic food for your cat, you really need to test different foods, and see what works.

Unfortunately, the food testing period can take some time. This is because the effects of a food can actually last for up to a couple weeks after you change foods. This means that if your cat is having a reaction to its current food (Ex. having itchy skin, dandruff, etc.) these can last up to a couple weeks after switching to a food that does not cause this reaction.

The best way to find what your cat is having a reaction to is by buying limited ingredient cat food.

Limited ingredient foods contain only one protein source. (Etc. beef, chicken, lamb, fish). By feeding your cat with only one type of hypoallergenic food at a time for a week, you should be able to tell what proteins they can and cannot handle. You can continue trying different types until you see your cat starting to have the reactions again. Once you narrow down the type of food your cat cannot eat, just make sure any food you buy does not contain that protein.
